Banana Fruit Bread
| 1 3/4 C flour | 2/3 C sugar |
| 2 3/4 tsp baking powder | 2 eggs, slightly beaten |
| 1/2 tsp salt | 1 C mashed bananas |
| 1/2 C pecans, chopped | 1 C mixed candied fruit |
| 1/3 C shortening | 1/4 C raisins |
-Grease only the bottom of a 5" x 9" loaf pan.
-Sift together the flour, baking powder, and salt. Add the nuts.
-Cream shortening and sugar until creamy and fluffy.
-Add the eggs and beat until thick and lemon in color.
-Add the flour mixture alternately with the mashed bananas, blending after each addition.
-Fold in the fruit and raisins.
-Pour into the loaf pan and bake at 350° for 60-70 minutes.
