Who can resist nibbling an Elephant Ear!
Elephant Ears
| 1 1/2 C milk | 2 pkgs. yeast |
| 2 T sugar | 4 C flour |
| 1 tsp salt | Cooking oil for frying |
| 6 T butter | 1/2 C sugar + 1 tsp cinnamon |
Combine milk, sugar, salt, and shortening and heat until shortening is melted. Cool to lukewarm
Add yeast and stir until dissolved.
Stir in flour. Beat until smooth.
Place dough in an oiled bowl, cover with plastic wrap and a damp cloth.
Let rise until doubled in bulk--about 30 minutes.
Heat oil to 350° in a large skillet or deep-fat fryer.
Pinch off pieces of dough about the size of a walnut and roll (on a lightly floured surface) or stretch to about a 6-8" circle.
In the hot oil, fry to a light brown color on both sides. Drain and then sprinkle with the cinnamon sugar or with powdered sugar.
