| 1 C all-purpose flour | 1/4 C chilled butter |
| 1 C whole wheat flour | 1/2 C raisins |
| 5 T sugar | 1/2 C buttermilk |
| 2 tsp baking powder | 1 tsp vanilla |
| 1 tsp baking soda | 1 egg, slightly beaten |
| 1/4 tsp salt |
- Combine flours, sugar, baking powder, baking powder, and salt. Blend well.
- Cut in the butter.
- Combine the buttermilk, vanilla, and egg; stir well
- Add the dry mix and raisins to the buttermilk mix and stir just until the dry ingredients are moistened. Dough will be sticky.
- Turn out onto a lightly floured surface and knead (push & fold) 5 times. Pat dough into an 8" circle and cut with a biscuit cutter, or pat pat the dough into a circle on a baking sheet coated with cooking spray. (If you choose the latter, cut the dough into 6 wedges, cutting into but not through the dough.)
- Brush the dough with a lightly beaten egg white and sprinkle with 1 T sugar.
- Bake at 400° for 18 minutes for the 8" circle (less for the the smaller biscuits) or until golden.
- Service hot with butter -- and jam or marmalade, if you like.
