| 2 C all-purpose flour | 1 tsp baking soda |
| 2 C whole-wheat flour | 3 T chilled butter |
| 2 T sugar | 1 1/3 C buttermilk |
| 1 tsp salt | 1 extra large egg |
- Combine the flours, sugar, salt, and baking powder and blend well.
- Cut the butter into the dry ingredients.
- Combine the buttermilk and egg and add to the mixture. Mix just until the dough leaves the sides of the bowl and forms a ball.
- Turn the dough onto a lightly floured surface and knead (push and fold) 10 times.
- Form the dough into an 8" round pan sprayed with cooking spray. Cut an "x" about 1/2" deep in the top of the dough.
- Bake at 375° for 45 minutes. Remove from pan and let cool.
- Cut into 12 wedges and serve warm with butter.
