Zucchini Bread
| 3 beaten eggs | 1 tsp. baking powder |
| 1 C oil | 3 C flour |
| 1 C white sugar | 2 - 3 C grated zucchini |
| 1 C brown sugar | 1 C chopped pecans (optional) |
| 1 tsp. salt | 2 tsp. vanilla |
| 3 tsp. cinnamon |
- In a large bowl, mix together the eggs, oil, white sugar, and brown sugar. Beat well.
- Mix together the salt, cinnamon, baking powder, and flour. Add to the egg/sugar mixture, and mix thoroughly.
- Add the zucchini, pecans, and vanilla. Beat thoroughly. Pour into two greased loaf pans.
- Bake at 300° for one hour or until it tests done.
