An authentic recipe from the hills of Kentucky!

Stack Cake
| 1/3 C shortening | 1/2 tsp baking soda |
| 1/2 C sugar | 1/2 tsp salt |
| 1/3 C molasses | 1 tsp ginger |
| 1 egg, slightly beaten | 2 tsp vanilla |
| 1/2 C buttermilk | 1 large jar applesauce (can use 1/2 applesauce and 1/2apple butter) |
| 3 1/2 C flour | 1/2 tsp allspice. |
| 2 tsp baking powder |
Cream shortening and sugar. Add egg, molasses, buttermilk, and mix well.
Sift dry ingredients and add to shortening and sugar. Add vanilla, and mix well.
Divide dough into 8 equal parts. Roll each into an 8" or 9" circle (about 1/8" thick
Bake the circles on cookie sheets at 350° for 10 minutes.
Stack the circles with applesauce and let stand at room temperature for at least 24 hours.
Cut into wedges and serve.
