John's favorite shortcake!
Old Fashioned Shortcake
| 2 C all-purpose flour | 1/2 tsp salt |
| 1/4 C granulated sugar | 1/2 C butter or margarine |
| 3 tsp baking powder | 2/3 C milk |
-Mix flour, sugar, baking powder, and salt.
-Cut in the shortening.
-Add the milk and stir to make a soft dough.
-Roll out on a lightly floured board, knead gently 8-10 times until smooth.
-Roll to about 1/2" thick and cut with a large round cutter.
-Bake on an ungreased baking sheet (1" apart) for 12-15 minutes at 425°.
-Split the shortcakes in half, placing the bottom half on a dessert plate or in a dessert bowl.
-Spread with butter (to keep the juice from soaking in) and spoon on sweetened berries.
-Replace the top half of the shortcake and spoon on more berries.
-Add a dollop of whipped cream and a whole berry for garnish.
-Makes approximately 8 shortcakes.
