Homemade Apple Butter
| 12-14 cooking apples | 1 tsp cinnamon |
| 2 C apple cider | 1/4 tsp ground cloves |
| 2 C sugar |
- Peel, core and chop apples to equal about 16 cups.
- Place apples and cider in a slow cooker. Cover. Cook for 10-12 hours.
- Puree the mixture in a food processor and return the pulp to the slow cooker.
- Add sugar, cinnamon, and cloves; stir. Cover and cook on low 1 hour.
- Put into clean jars. Keep refrigerated.
- Makes 8 cups.
(To make this in a saucepan, use a large, heavy kettle. Cook the apples and cider together on low, stirring occasionally, until the mixture is soft and thick--1-2 hours. Puree the pulp and return to the kettle. Add sugar, cinnamon, and cloves. Simmer until the mixture is the desired consistency -- 1-2 hours.)
