Frozen Strawberry Jam

2 C crushed strawberries (1 qt) 1 box Sure-Jel fruit pectin
4 C granulated sugar  

-Wash the berries well, remove the stems, and crush the berries.
-Measure the 2 C of crushed berries into a large bowl.
-Measure the sugar into another bowl and then stir it into the fruit.
-Set aside for 10 minutes.  Stir occasionally.
-Stir 1 box of Sure-Jel and 3/4 C water together in a small saucepan.
-Bring the mixture to a boil on high heat, stirring constantly.
-Boil and stir for 1 minute, and remove from the heat.
-Stir the pectin mixture into the fruit mixture.  Stir constantly until the sugar is completely dissolved and no longer grainy--about 3 minutes)
-Pour quickly into clean plastic containers to within 1/2" of the top.
-Wipe off the top edges of the containers and cover with the lids.
-Let stand at room temperature for 24 hours to set, and then refrigerate for immediate use or freeze.
-If freezing, seal the containers with freezer tape and mark the date.
-Yield -- 5 cups

* The directions indicate that this jam may be frozen up to 1 year.   However, we have kept it three years without any discernible change in flavor!
