Chinese Almond Butter Cookies
| 1/2 C soft butter or margarine | 1 tsp almond extract |
| 1/4 C sugar | 1 C all-purpose flour |
| 1/2 C finely chopped blanched almonds | Blanched whole almonds |
- Cream butter and sugar.
- Stir in chopped almonds and almond extract
- Mix in flour and work until the dough is smooth.
- Shape teasoonfuls of dough into balls and place on ungreased baking sheet.
- Using the greased bottom of a glass dipped in sugar, flatten the top of the dough balls.
- Press whole almond into the center of each cookie.
- Bake 9-10 minutes or until slightly browned.
- Makes about 3 dozen
